Method

Prepare the Seafood

1

Chop the Seafood

If not already done, chop the cooked shrimp, crab meat, and scallops into bite-sized pieces.

Make the Cheese Sauce

2

Create the Roux

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 2 minutes until lightly browned.

3

Add Milk

Slowly pour in the milk while continuously whisking to avoid lumps. Continue cooking until the mixture thickens, about 5 minutes.

4

Add Cheese and Seasonings

Stir in the shredded cheddar and Monterey Jack cheese, salt, black pepper, and chili powder. Keep stirring until the cheese has completely melted and the sauce is smooth.

Assemble the Nachos

5

Layer the Chips

On a large baking sheet, spread the corn tortilla chips evenly.

6

Add Seafood

Evenly distribute the chopped shrimp, crab meat, and scallops over the tortilla chips.

7

Pour Cheese Sauce

Drizzle the cheese sauce generously over the seafood and chips.

8

Add Fresh Toppings

Top with diced tomatoes, sliced jalapeños, chopped green onions, and cilantro.

Final Bake

9

Bake the Nachos

Preheat the oven to 350°F (175°C). Bake the assembled nachos in the oven for about 10-15 minutes until heated through and cheese is bubbly.

10

Serve

Remove from the oven and serve immediately with a side of sour cream for dipping.
