Shrimp Preparation
Marinate the Shrimp
In a large bowl, combine the buttermilk and hot sauce. Add the peeled and deveined shrimp, making sure they are fully submerged. Cover and refrigerate for at least 30 minutes to marinate.
Prepare the Coating
In a shallow dish, mix together the flour, cornmeal, Cajun seasoning, salt, and black pepper until well combined.
Coat the Shrimp
Remove the shrimp from the buttermilk marinade, allowing excess liquid to drip off. Dredge each shrimp in the flour mixture, ensuring they are evenly coated. Place coated shrimp on a plate.
Heat the Oil
In a large frying pan or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Shrimp
Carefully add the coated shrimp to the hot oil in batches, frying for about 3-4 minutes or until golden brown and cooked through. Use a slotted spoon to remove them from the oil and drain on paper towels.
Sandwich Assembly
Prepare the Bread
Slice the French baguette or hoagie rolls lengthwise, leaving one side attached to create a hinge.
Assemble the Sandwich
Spread a generous amount of remoulade sauce on both sides of the bread. Layer the shredded lettuce, sliced tomato, and pickles on the bottom half of the roll. Top with the crispy fried shrimp.
Finish and Serve
Close the sandwich and press gently. Cut in half if desired and serve immediately with extra remoulade on the side.
