Marinade Preparation

Prepare the Marinade

In a medium bowl, whisk together olive oil, lime juice, garlic powder, ground cumin, chili powder, salt, and black pepper.

Marinate the Steak

Place the steak in a large zip-top bag or shallow dish. Pour the marinade over the steak, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

While the steak is marinating, slice the bell peppers and onion into thin strips.

Sauté the Vegetables

In a large skillet or frying pan over medium-high heat, add a tablespoon of olive oil. Once hot, add the sliced bell peppers and onion, and sauté for about 5-7 minutes until they are tender and slightly charred. Remove from the skillet and set aside.

In the same skillet, add the marinated steak. Cook for about 4-5 minutes on each side for medium-rare, or longer if desired. Use a meat thermometer to check for doneness (130-135°F for medium-rare).

Remove the steak from the skillet and let it rest for 5 minutes before slicing it against the grain into thin strips.

Warm the flour tortillas in a dry skillet or microwave. On each tortilla, layer the sliced steak, sautéed peppers, and onions. Add a dollop of sour cream, guacamole, and a sprinkle of fresh cilantro.
