Cook the Bacon

In a large pot over medium heat, add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the bacon grease in the pot.

In the same pot with the bacon grease, add the chopped onion, celery, and minced garlic. Sauté until the vegetables are tender, about 5 minutes.

Add Potatoes and Broth

Add the diced potatoes, chicken broth, thyme, bay leaf, salt, and black pepper to the pot. Bring to a boil, then reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.

Incorporate Clams and Cream

Once the potatoes are tender, stir in the minced clams and heavy cream. Let it simmer for an additional 5 minutes, stirring occasionally.

Garnish and Serve

Remove the bay leaf from the chowder. Serve hot, garnished with crispy bacon and chopped fresh parsley.
