Boil Water for Pasta

Fill a large pot with water, add a generous amount of salt, and bring it to a boil.

Prepare the Sauce

In a mixing bowl, whisk together the eggs and finely grated Pecorino Romano cheese until well combined. Add black pepper to taste.

Cook Pancetta

Cut the pancetta into small cubes. In a large skillet, cook the pancetta over medium heat until it becomes crispy and golden brown. Remove from heat and set aside.

Cooking Pasta and Combining

Cook Spaghetti

Once the water is boiling, add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.

Combine Everything

Quickly add the hot drained spaghetti to the skillet with the pancetta. Toss to combine and allow the residual heat to warm the pasta.

Add Sauce

Remove the skillet from the heat. Pour the egg and cheese mixture over the pasta, stirring quickly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.

Serving

Plate and Garnish

Serve the spaghetti carbonara immediately, garnished with fresh parsley and additional grated Pecorino Romano cheese if desired.
