Preparation of Ingredients
Prepare the Salmon
Pat the salmon fillets dry with a paper towel. Season both sides with salt and black pepper.
Prepare the Vegetables
Trim the ends of the asparagus. Halve the cherry tomatoes. Slice the zucchini into half-moon shapes. Set the vegetables aside.
Prepare the Lemon
Cut the lemon in half and set aside for squeezing over the finished dish.
Cooking
Heat the Oil
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
Sauté the Vegetables
In the same skillet, add the asparagus and zucchini. Sauté for about 3 minutes, then add the cherry tomatoes. Cook for an additional 2-3 minutes until the vegetables are tender but still crisp.
Serve
Remove the skillet from heat. Plate the salmon fillets alongside the sautéed vegetables. Squeeze fresh lemon juice over the top before serving.
