Preparing the Roasted Chicken

Marinate the Chicken

In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, juice from half the lemon, salt, and black pepper. Rub this mixture all over the chicken, including under the skin. Squeeze the other half of the lemon over the chicken. Let it marinate in the fridge for at least 1 hour, preferably overnight.

Preheat Oven

Preheat your oven to 425°F (220°C).

Roast the Chicken

Place the marinated chicken on a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). Baste the chicken with its juices halfway through the cooking time.

Rest the Chicken

Once cooked, remove the chicken from the oven and let it rest for about 10-15 minutes before carving.

Preparing the Garlic Mashed Potatoes

Boil the Potatoes

Peel and chop the potatoes into even-sized pieces. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

Cook the Garlic

While the potatoes are boiling, peel and crush the garlic cloves. In a small saucepan, melt 2 tablespoons of butter over low heat and add the garlic. Cook gently until fragrant, about 2-3 minutes, being careful not to burn the garlic.

Mash the Potatoes

Drain the boiled potatoes and return them to the pot. Add the remaining butter, heavy cream, cooked garlic, salt, and black pepper. Mash until smooth and creamy.
