Prepare Salad Ingredients
Wash and Dry Greens
Thoroughly rinse the mixed seasonal greens under cold water. Use a salad spinner to dry them completely or pat them dry with a clean kitchen towel.
Cut Vegetables
Halve the cherry tomatoes and set aside. Peel and dice the cucumber into bite-sized pieces. Remove the stem and seeds from the red bell pepper, and chop it into small pieces.
Make the Dressing

In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, and honey until well combined. Season with salt and black pepper to taste.
Assemble the Mason Jar Salad
Layer the Ingredients
In a clean mason jar, start by adding the dressing to the bottom. Then layer the red bell pepper, cucumber, cherry tomatoes, and finally the mixed greens on top. This will keep the greens fresh and crispy.
Seal and Store
Seal the mason jar with its lid and store it in the refrigerator. The salad can be prepared a day in advance.
