Feijoada Preparation

Soak Beans

Soak the black beans overnight in water. Drain and set aside.

Cook Meats

In a large pot, cook the pork belly, smoked sausage, and beef chuck until browned.

Sauté Aromatics

Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent.

Combine Ingredients

Add the soaked black beans, bay leaves, cumin, salt, and black pepper. Cover with water and bring to a boil.

Simmer

Reduce heat and let simmer for about 1.5 to 2 hours, or until beans are tender and flavors meld.

Rice Preparation

Cook Rice

In a separate pot, bring water to a boil. Add the white rice and a pinch of salt.

Finish Rice

Cover and simmer on low heat for 15-20 minutes or until rice is fully cooked.

Farofa Preparation

Sauté Onion

In a skillet, melt butter and sauté the chopped onion until golden.

Toast Farofa

Add cassava flour and toast until golden brown, stirring constantly.

Torresmo Preparation

Fry Torresmo

In a frying pan, add diced pork belly and fry until crispy, rendering out the fat.

Couve e Laranja Preparation

Prepare Kale

Sauté chopped kale in a little olive oil until wilted. Serve alongside fresh orange slices.
