Pudim (Brazilian Flan)

Brigadeiros (Chocolate Truffles)

Quindim (Coconut Custard)

Method

Pudim (Brazilian Flan)

1

Prepare the Caramel

In a saucepan, melt the sugar over medium heat until it turns into a golden-brown caramel. Immediately pour it into a round baking dish, tilting to coat the bottom evenly.

2

Blend the Ingredients

In a blender, combine the condensed milk, milk, eggs, and vanilla extract. Blend until smooth.

3

Combine and Bake

Pour the blended mixture over the caramel in the baking dish. Place the dish in a larger baking pan filled with water (water bath) and bake in a preheated oven at 180°C (350°F) for about 1 hour or until set.

4

Cool and Serve

Allow to cool completely, then refrigerate for at least 4 hours before inverting onto a serving plate.

5

Cook the Mixture

In a saucepan, combine the sweetened condensed milk, cocoa powder, and butter. Cook over medium heat, stirring constantly, until thickened (about 10 minutes).

6

Shape the Truffles

Remove from heat and let the mixture cool slightly. Grease your hands with butter and shape into small balls.

7

Coat with Sprinkles

Roll the balls in chocolate sprinkles until evenly coated. Place on a plate to set.

Grease small baking molds with butter and pour the mixture evenly into them.

10

Bake

Bake in a preheated oven at 180°C (350°F) for about 30-35 minutes or until the tops are golden.

11

Cool and Serve

Let the quindim cool before carefully unmolding. Serve chilled.
