Prepare Spinach

Wash the fresh spinach thoroughly. In a large pot, bring water to a boil, add the spinach, and blanch for about 1-2 minutes until wilted. Drain and cool in cold water, then squeeze out excess moisture.

Combine Ingredients

In a mixing bowl, combine the blanched spinach, feta cheese, cream cheese, minced garlic, lemon juice, salt, black pepper, and olive oil. Mix well until all ingredients are fully incorporated.

Prepare Sauce

In a medium bowl, combine the cream cheese, sour cream, chipotle sauce, lime juice, garlic powder, and salt. Mix until smooth and creamy. Stir in the chopped cilantro and set aside.

Breading

Prepare Breading Station

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

Bread the Mixture

Take a small amount of the spinach and feta mixture, shape it into a patty or ball, then dip it in flour, followed by the egg, and finally coat it with breadcrumbs. Repeat until all the mixture is used.

Deep Frying

Heat oil in a deep frying pan over medium-high heat. Once hot, carefully add the breaded spinach and feta patties in batches, avoiding overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Oven Baking Option

Preheat the oven to 400°F (200°C). Place the breaded patties on a baking sheet lined with parchment paper and bake for 20-25 minutes, flipping halfway through, until golden and crispy.
