Prepare the Risotto

In a saucepan, heat the chicken broth and keep it warm. In another pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, cooking until softened. Stir in the Arborio rice and cook for 2 minutes. Gradually add the warm chicken broth, one ladle at a time, stirring constantly until the liquid is absorbed. Continue adding broth until the rice is creamy and al dente, about 20 minutes. Remove from heat and stir in Parmesan cheese, salt, and pepper. Let cool.

Form the Arancini

Once the risotto is cooled, take a small amount in your hand and flatten it. Place a cube of mozzarella and a piece of prosciutto in the center. Shape the rice around the filling to form a ball. Repeat until all the risotto is used.

Coat and Fry

Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third. Roll each rice ball first in flour, then dip into the egg, and finally coat with breadcrumbs. In a deep frying pan, heat the olive oil over medium-high heat. Fry the arancini in batches until golden brown, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
