Cake and Mousse

Method

Preparation

1

Prepare the Cake Base

Preheat the oven to 180°C (350°F). Grease and flour a 9-inch round cake pan. In a heatproof bowl, melt the dark chocolate and butter together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

2

Mix Eggs and Sugar

In a large mixing bowl, whisk the eggs and granulated sugar together until the mixture is pale and fluffy.

3

Combine Mixtures

Gently fold the cooled chocolate mixture into the egg mixture. Then, sift in the flour and salt, folding until just combined.

4

Bake the Cake

Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan before inverting onto a wire rack.

5

Prepare the Mousse

In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Gently fold the whipped cream into the cooled chocolate mixture until well combined.

6

Assemble the Cake

Once the cake has cooled, slice it in half horizontally. Spread half of the mousse on the bottom layer, then place the top layer back on. Top with the remaining mousse and smooth it out.

7

Chill and Serve

Refrigerate the cake for at least 2 hours before serving. Decorate with chocolate shavings or berries if desired.
