Preparation
Prepare Sushi Rice
Rinse sushi rice under cold water until the water runs clear. In a pot, combine rice and water. Bring to a boil, then cover and reduce to low heat for 20 minutes. Remove from heat and let sit for 10 minutes. Stir in rice vinegar, sugar, and salt.
Make Spicy Mayo
In a small bowl, mix mayonnaise and sriracha sauce until well combined. Adjust spiciness to taste.
Prepare Soy & Ginger Sauce
In another bowl, combine soy sauce and grated ginger. Stir until ginger is evenly distributed.
Form Sushi Bites
Once the sushi rice is cool enough to handle, wet your hands and form small bite-sized cubes of the rice. Place a spoonful of diced ahi tuna on top of each rice cube.
Fry the Sushi Bites
In a frying pan, heat vegetable oil over medium-high heat. Once hot, carefully place the rice cubes in the oil and fry until golden and crispy on all sides, about 2-3 minutes. Remove and drain on paper towels.
Serve
Drizzle the soy & ginger sauce over the crispy rice bites, add a dollop of spicy mayo, and sprinkle with chopped green onions and sesame seeds. Serve immediately.
