Prepare the ingredients
Chop the vegetables and slice the sausage. Cut chicken into bite-sized pieces.
Cook the chicken and sausage
In a large pot, heat vegetable oil over medium-high heat. Add the chicken and sausage, cooking until browned (about 5-7 minutes). Remove from pot and set aside.
Add remaining ingredients
Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, bay leaves, salt, and black pepper.
Combine and cook
Return the chicken and sausage to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.
Garnish and serve
Remove bay leaves, and fluff the jambalaya with a fork. Garnish with sliced green onions before serving.
