Prepare the Vegetables

In a large pot, heat olive oil over medium heat. Add chopped onion, bell pepper, and celery. Sauté for 5-7 minutes until softened.

Add Garlic and Spices

Stir in minced garlic and Cajun seasoning. Cook for an additional 1-2 minutes until fragrant.

Incorporate Remaining Vegetables

Add zucchini, carrot, and canned diced tomatoes (with juice) to the pot. Stir well.

Add Rice and Broth

Pour in vegetable broth and add rice. Bring the mixture to a boil.

Simmer

Reduce heat to low, cover, and let simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.

Finish and Serve

Remove from heat. Stir in chopped parsley and season with salt and black pepper to taste. Serve hot.
