Bone Marrow & Seasoning

Preheat and prepare bones

Preheat your oven to 450°F (230°C). Pat the marrow bones dry with paper towels and lay them cut-side up on a rimmed baking sheet or in a baking dish lined with foil for easier cleanup.

Season bones

Lightly season each marrow cavity with kosher salt and freshly ground black pepper. Scatter the minced garlic evenly over the marrow bones, taking care not to bury the marrow.

Roast

Roast the bones in the preheated oven for 12–18 minutes, until the marrow is very soft and just beginning to separate from the bone but not melting away. The marrow should jiggle slightly when you gently nudge the bone.

Finish with parsley and lemon

Remove bones from the oven. Sprinkle the chopped parsley over the hot marrow and grate the lemon zest on top. Squeeze a few drops of lemon juice over each bone to brighten the flavor. Optionally sprinkle the red pepper flakes now if using.

Prepare toast

While the bones roast, arrange the bread slices on a baking sheet. Lightly brush each slice with softened butter (or olive oil if preferred). Toast in the oven for 6–8 minutes alongside the bones, or under a broiler for 1–2 minutes per side, until golden and crisp. Watch closely to prevent burning.

Season toast

Immediately after toasting, sprinkle the warm toast lightly with coarse sea salt to taste.

Serve

Serve the roasted marrow bones hot with the toasted bread on the side. Provide a small spoon or marrow scoop. Encourage diners to scoop marrow onto toast, finish with a little additional parsley or microgreens and an optional extra squeeze of lemon.

Optional finishing

If desired, finish each assembled toast with a pinch of red pepper flakes for heat and a few microgreens for color and freshness. Serve immediately.
