Prep bread and spread

Spread 1 tbs unsalted butter evenly on one side of each sourdough slice. Heat a nonstick skillet over medium heat until shimmering (about 1–2 minutes). Place the bread butter-side-down in the skillet and toast until golden and crisp, 2–3 minutes. Flip briefly (30 seconds) just to warm the other side, then remove to a cutting board, buttered side up.

Assemble condiments

On the un-toasted side of one slice, spread 1 tbs mayonnaise evenly. On the un-toasted side of the other slice, spread 1 tsp Dijon mustard. These will be the inner faces of the sandwich.

Season vegetables

Place the tomato slices on top of the mayonnaise and sprinkle the tomato with 1/8 tsp freshly ground black pepper and a scant 1/4 tsp kosher salt distributed evenly over the slices.

Layer sandwich

On top of the seasoned tomato, arrange the lettuce leaf, then the roast turkey slices (3 oz) in an even layer, followed by the cheddar cheese slice. Add the red onion rings and pickle slices on top of the cheese.

Finish and serve

Place the mustard-spread bread slice (toasted side out) on top of the layered ingredients, pressed gently. If you like the cheese slightly melted, return the assembled sandwich to the warm skillet for 30–60 seconds with a lid on, pressing lightly with a spatula until the cheese softens. Transfer to a cutting board, cut the sandwich in half on a diagonal, and serve immediately.
