Dough Preparation

Mix Dry Ingredients

In a large bowl, sift together the all-purpose flour, cocoa powder, powdered sugar, baking powder, and salt. Set aside.

Cream Butter and Sugar

In another bowl, cream the unsalted butter until smooth. Gradually add the powdered sugar and mix until fluffy. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.

Combine Mixtures

Gradually add the dry mixture to the butter mixture, mixing until well combined and a dough forms. If the dough is too sticky, add a little more flour until it reaches the right consistency.

Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 1 hour, or until firm.

Baking

Preheat Oven

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Roll Out Dough

Once chilled, take the dough out and roll it out on a lightly floured surface to about 1/4 inch thickness.

Cut Out Cookies

Using a round cookie cutter, cut out cookies from the rolled dough. Place them on the prepared baking sheet.

Bake

Bake in the preheated oven for 10-12 minutes, or until the edges are firm. Remove from the oven and let cool completely on a wire rack.

Assembling

Fill Cookies

Take half of the cooled cookies and spread a generous layer of dulce de leche on the flat side. Top each with another cookie, pressing gently to secure.

Coat with Sugar Mixture

In a small bowl, mix the powdered sugar and cocoa powder together. Roll each filled cookie in the sugar mixture until well coated.
