Gnocchi Preparation

Cook the Potatoes

Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and allow to cool slightly.

Mash the Potatoes

Once the potatoes are cool enough to handle, peel them and mash them in a mixing bowl until smooth.

Make the Gnocchi Dough

Add the flour, egg, and salt to the mashed potatoes. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.

Shape the Gnocchi

Divide the dough into four pieces. Roll each piece into a long rope about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges on each piece.

Cook the Gnocchi

Bring a large pot of salted water to a boil. Drop the gnocchi in batches into the boiling water. They are done when they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Melt the Butter

In a saucepan over medium heat, melt the unsalted butter.

Add Cream

Once the butter is melted, pour in the heavy cream and stir to combine. Bring the mixture to a gentle simmer.

Add Parmesan

Gradually whisk in the Parmesan cheese until melted and smooth. Season with salt and black pepper.

Combine Gnocchi and Sauce

Add the cooked gnocchi to the sauce and gently toss to coat the gnocchi evenly.
