To Prepare the Chimichurri Sauce
Make the Sauce
In a blender or food processor, combine the fresh parsley, garlic cloves, red wine vinegar, olive oil, salt, and black pepper. Blend until smooth and well combined. Adjust seasoning if necessary.
To Cook the Choripan
Toast the Bread
Cut the French bread rolls in half and lightly toast them on the grill for 1-2 minutes until golden brown.
Assemble the Choripan
Place the grilled chorizo inside the toasted bread rolls and drizzle generously with the chimichurri sauce. Serve immediately.
To Prepare the French Fries
Cut the Potatoes
Wash and peel the potatoes. Cut them into thin strips to form fries.
Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until hot.
Fry the Potatoes
Carefully add the potato strips to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes per batch. Use a slotted spoon to remove them and drain on paper towels.
Season the Fries
Sprinkle the hot fries with salt while they are still warm.
