In a medium saucepan, combine the sweetened condensed milk, whole milk, granulated sugar, and baking soda. Mix well until all ingredients are fully incorporated.

Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir continuously to prevent the milk from scorching at the bottom.

Cooking

Once the mixture starts to simmer, reduce the heat to low. Continue to cook and stir frequently for about 1 to 1.5 hours. The mixture should gradually thicken and change color to a golden brown.

Keep an eye on the mixture and stir regularly to ensure it doesn't stick to the bottom of the pan. If the mixture begins to bubble too vigorously, lower the heat further.

After about 1 hour, check the consistency. To test, drop a small amount onto a plate and let it cool slightly. It should be thick enough to hold its shape but still pourable.

Once the dulce de leche reaches the desired consistency, remove it from heat. Allow it to cool slightly before transferring it to a glass jar or airtight container.

Let it cool to room temperature before sealing. Store in the refrigerator for up to 2 weeks.
