Preparing Mussels

Clean the Mussels

Rinse the mussels under cold water and scrub the shells with a brush to remove any dirt or barnacles. Remove any beards (the fibrous strands) attached to the mussels.

Prepare Garlic Oil

Mince the garlic cloves. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Do not let it brown.

Cook the Mussels

Add the cleaned mussels to the pot with the garlic oil. Cover the pot and cook for about 5-7 minutes, shaking the pot occasionally, until the mussels open up. Discard any mussels that do not open.

Add Spicy Pomodoro Sauce

Once the mussels are cooked, pour in the spicy pomodoro sauce and stir gently to coat the mussels. Let it simmer for an additional 2-3 minutes to warm the sauce.

Prepare the Salad Ingredients

In a large bowl, combine the mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.

Make the Dressing

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper to taste.

Toss the Salad

Pour the dressing over the salad and toss gently to combine all the ingredients.
