Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.

Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Allow the rice to cool to room temperature.

Prepare the Filling

Shred the imitation crab meat into bite-sized pieces. Cut the avocado in half, remove the pit, scoop the flesh out, and slice it into thin strips.

Assemble the Rolls

Place a bamboo sushi mat on a flat surface. Lay a sheet of nori on the mat, shiny side down. Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top. Lay the imitation crab and avocado slices in a line across the center of the rice.

Roll the Sushi

Using the mat, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight. Once rolled, use a sharp knife to slice the roll into 6-8 pieces. Repeat with the remaining ingredients.

Serve

Arrange the sushi rolls on a plate and serve with soy sauce, wasabi, and pickled ginger.
