Marinate the Prawns

In a bowl, season the prawns with salt and black pepper. Let them marinate for about 15 minutes.

Prepare Breading Station

Set up a breading station with three shallow dishes: one with flour, one with the beaten egg, and one with panko breadcrumbs.

Bread the Prawns

Coat each prawn first in flour, shaking off the excess, then dip in the beaten egg, and finally coat with panko breadcrumbs. Press the breadcrumbs onto the prawns to ensure they adhere well.

Mix the Sauce

In a small bowl, combine mayonnaise, dill pickles, capers, lemon juice, salt, and black pepper. Mix well until all ingredients are combined. Refrigerate until ready to serve.

Heat the Oil

In a large, deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Prawns

Carefully add the breaded prawns to the hot oil in batches, frying for about 2-3 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
