Preparation
Prepare the Marinade
In a bowl, whisk together the white miso paste, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and black pepper until smooth.
Marinate the Duck Breasts
Place the duck breasts in a resealable plastic bag and pour the miso marinade over them. Seal the bag, ensuring the breasts are well-coated. Refrigerate for at least 4 hours or preferably overnight.

Sear the Duck Breasts
Once the sous vide time is complete, remove the duck breasts from the bag and pat dry with paper towels. Heat a skillet over medium-high heat and add a small amount of oil. Sear the duck breasts skin-side down for about 3-4 minutes until the skin is crispy. Flip and sear for an additional 1-2 minutes.
Rest and Serve
Let the duck breasts rest for a few minutes before slicing. Serve with your choice of sides.
