If you prefer a salted rim, rub the lime wheel around the outer rim of a coupe or rocks glass, then dip the rim into a small plate of coarse salt. Set the glass aside to dry slightly.
Measure Ingredients
Measure out the Jose Cuervo Reserva de la Familia Platino (6 tbs ≈ 3 oz), optional 1 tbs aged tequila, 1 oz fresh lime juice, 0.5 oz agave syrup, 0.5 oz orange liqueur, and 1 tsp orange bitters. If using egg white, separate one egg (or measure an equivalent of aquafaba).

Open the shaker, add a generous handful of ice (enough to chill but not over-dilute). Seal and shake hard for another 10–15 seconds until the shaker is very cold to the touch and the drink is well chilled and slightly diluted.

Double-strain the cocktail into the prepared coupe or rocks glass (depending on whether you rimmed it). Use a fine mesh strainer in addition to the shaker strainer to remove ice shards and any egg white solids for a silky texture.
