Method

Preparation

1

Prepare the Chicken

Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and black pepper on both sides.

2

Bread the Chicken

Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and breadcrumbs mixed with grated Parmesan cheese in a third. Dredge each chicken breast in flour, dip into the eggs, and then coat with the breadcrumb mixture, pressing gently to adhere.

Cooking the Chicken

3

Fry the Chicken

In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 3-4 minutes on each side until golden brown. Transfer the chicken to a baking dish.

Making the Sauce

4

Prepare the Sauce

In the same skillet, add a little more olive oil if necessary and sauté the minced garlic until fragrant (about 30 seconds). Add crushed tomatoes, oregano, basil, sugar, salt, and black pepper. Simmer for about 10-15 minutes, stirring occasionally.

Assembling and Baking

5

Assemble the Dish

Pour the sauce evenly over the browned chicken breasts. Top each piece with shredded mozzarella cheese.

6

Bake

Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.

7

Garnish and Serve

Remove from the oven, garnish with chopped fresh basil, and serve immediately.
