Prepare the Milk
Add Citric Acid
Once the milk reaches the desired temperature, sprinkle the citric acid over the surface and stir gently for about 30 seconds to dissolve.
Cutting and Cooking the Curds

Once the curds have formed, cut them into 1-inch cubes using a long knife. Let them sit for 5 minutes to firm up.
Cook the Curds
Slowly heat the curds to 40°C (104°F) over a low flame, gently stirring occasionally to prevent them from sticking together. Keep them at this temperature for 5 minutes.

Drain the Curds
Carefully pour the curds into a colander lined with cheesecloth. Allow the whey to drain for about 5 minutes.
Stretch the Cheese
Transfer the drained curds to a microwave-safe bowl. Heat them in the microwave for about 1 minute until hot. Knead and stretch the cheese until smooth and elastic. You may need to heat it again for another 30 seconds if it cools too quickly.
Finalizing and Storing
Form the Mozzarella
Shape the cheese into balls or logs as desired. Place them in a bowl of ice water to cool and firm up for about 5-10 minutes.

Once cooled, you can store the mozzarella in a saltwater brine or wrap it in plastic wrap and refrigerate it for up to a week.
