Cook the Bacon

In a skillet over medium heat, cook the thick-cut bacon until crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels.

Prepare the Bison Patties

In a bowl, combine ground bison, salt, and black pepper. Mix gently to avoid overworking the meat. Form into two equal patties.

Cook the Bison Patties

In the same skillet used for bacon, increase the heat to medium-high. Cook the bison patties for about 4-5 minutes on each side for medium doneness, adding sharp cheddar cheese on top during the last minute of cooking to melt.

Prepare the Tomato

While the patties are cooking, slice the fresh tomato into thick rounds.

Assemble the Burgers

Spread smoky mayo on the bottom half of the burger bun. Place the cooked bison patty with melted cheddar on top, followed by two slices of crispy bacon and a slice of fresh tomato. Top with the other half of the bun.
