Prepare the Tomatoes and Onion
In the same skillet, add the cherry tomatoes and diced red onion. Sauté until the tomatoes start to blister, about 5-7 minutes.
Mix the Chutney
Add the cooked bacon (chopped), brown sugar, apple cider vinegar, salt, black pepper, and smoked paprika. Stir well and cook for another 2-3 minutes until combined. Set aside.
Fried Smoked Gouda
Prepare the Smoked Gouda
Slice the smoked Gouda cheese into thick rounds, about 1/2 inch thick.
Bread the Cheese
Dip each slice of smoked Gouda first into the flour, then the egg, and finally into the bread crumbs, ensuring each piece is well coated.
Fry the Cheese
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the breaded Gouda slices in batches until golden brown, about 2-3 minutes each side. Remove and drain on paper towels.
Smoky Mayo
Mix the Mayo
In a small bowl, combine mayonnaise, smoked paprika, and garlic powder. Mix well and set aside.
Assembly
Assemble the Burger
On each burger bun, spread a layer of smoky mayo, add a lettuce leaf, a slice of fried smoked Gouda, and a generous spoonful of bacon chutney. Top with the other half of the bun.
Serve
