Method

Preparing the Baba Ghanouj

Roast the Eggplant

Preheat your oven to 400°F (200°C). Prick the eggplant several times with a fork and place it on a baking sheet. Roast for about 30-40 minutes, or until the skin is charred and the flesh is soft. Allow it to cool slightly.

Prepare the Garlic

While the eggplant is roasting, peel the garlic cloves and set them aside.

Blend the Ingredients

Once the eggplant is cool enough to handle, scoop out the flesh and add it to a food processor. Add the tahini, garlic, lemon juice, olive oil, salt, cumin, and smoked paprika. Blend until smooth and creamy.

Garnish

Transfer the Baba Ghanouj to a serving bowl and drizzle with a little extra olive oil. Sprinkle chopped fresh parsley on top for garnish.

Prepare the Pita Bread

Preheat your oven to 375°F (190°C). Cut the pita bread into wedges.

Season and Bake

In a bowl, toss the pita wedges with olive oil, salt, ground cumin, and paprika until evenly coated. Spread them out on a baking sheet in a single layer.

Bake the Chips

Bake in the preheated oven for about 10-15 minutes, or until golden brown and crispy. Keep an eye on them to prevent burning.
