Falafel Preparation

Soak Chickpeas

Place the dried chickpeas in a bowl and cover them with water. Let them soak overnight (or at least 8 hours) until they are soft.

Prepare Mixture

Drain the soaked chickpeas and place them in a food processor along with the chopped onion, minced garlic, fresh parsley, cumin powder, coriander powder, baking powder, salt, and black pepper. Process until the mixture is coarsely blended but not pureed.

Add Flour

Transfer the mixture to a bowl and stir in the flour until combined. The mixture should be moist but hold together when formed into balls.

Shape Falafel

Using your hands, form the mixture into small patties or balls about 1.5 inches in diameter.

Heat Oil

In a large skillet or deep pot, heat the vegetable oil over medium-high heat until hot (around 350°F or 175°C).

Fry Falafel

Carefully add the falafel to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 4-5 minutes on each side or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.

Tzatziki Sauce Preparation

Mix Ingredients

In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, and salt. Stir until well combined.

Chill

Cover the tzatziki sauce and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
