Vegetable Preparation

Prepare the Vegetables

Wash and slice the zucchini, red bell pepper, and red onion into thin strips. Clean the mushrooms and set aside.

Marinate the Vegetables

In a large bowl, combine olive oil, minced garlic, salt, and black pepper. Add the sliced vegetables and toss well to coat. Let marinate for at least 20 minutes.

Grilling

Preheat the Grill

Preheat your grill or grill pan over medium-high heat.

Grill the Vegetables

Place the marinated vegetables on the grill and cook for 5-7 minutes, turning occasionally until they are tender and have nice grill marks.

Yogurt Sauce Preparation

Make the Yogurt Sauce

In a bowl, mix plain yogurt, lemon juice, dried oregano, grated cucumber, and salt. Stir until well combined and set aside.

Assembling the Gyros

Prepare the Pita

Warm the pita bread on the grill for about 1 minute on each side until soft.

Assemble the Gyros

Place a portion of grilled vegetables in the center of each pita. Add a generous spoonful of yogurt sauce on top.

Serve

Wrap the pita around the filling, secure with a piece of parchment paper if desired, and serve immediately.
