Brewing Instructions
Mashing
In a large brew kettle, heat 6 liters of water to about 165°F (74°C). Add the Pale Malt and Crystal Malt to the water, ensuring it is well-mixed. Maintain the temperature at around 150°F (65°C) for 60 minutes.
Boiling
After mashing, sparge the grains with hot water to collect the wort. Bring the wort to a boil and add the Citra hops. Boil for 60 minutes, adding the Cascade hops in the last 10 minutes of the boil.
Cooling
After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).
Fermentation
Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal the fermenter and allow it to ferment at room temperature for about 1-2 weeks, or until fermentation is complete.
Bottling
Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the beer. Bottle the beer using sanitized bottles and caps. Allow the bottles to carbonate for another 1-2 weeks.
