Bowl Preparation

Prepare the Beetroot

Peel and chop the beetroot into small cubes. Steam or boil for about 15-20 minutes until tender. Drain and set aside to cool.

Cook Quinoa

Rinse 1 cup of quinoa under cold water. In a pot, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and let simmer for 15 minutes. Remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork.

Prepare Vegetables

Slice the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut into thin slices. Peel and julienne the carrot, and slice the cucumber into thin rounds.

Assemble the Bowl

In a bowl, place a layer of cooked quinoa as the base. Arrange the beetroot, avocado, cucumber, carrot, edamame, and seaweed salad on top of the quinoa. Sprinkle sesame seeds over the top for garnish.
