Honey Whipped Ricotta

Whip the Ricotta

In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and a pinch of salt. Using a hand mixer or whisk, whip the mixture until smooth and creamy. Set aside.

Fennel Pistachio Pesto

Prepare the Pesto

In a food processor, add the chopped fennel bulb, pistachios, fresh basil, garlic cloves, olive oil, lemon juice, and salt. Blend until the mixture is smooth and well combined. Adjust the seasoning if needed and set aside.

Balsamic Roasted Figs

Roast the Figs

Preheat your oven to 375°F (190°C). Cut the figs in half and place them on a baking sheet. Drizzle the balsamic vinegar, honey, and olive oil over the figs. Roast in the oven for 15-20 minutes or until the figs are soft and caramelized.

Grilled Bread

Grill the Bread

While the figs are roasting, slice the baguette into 1/2 inch thick slices. Brush both sides with olive oil. Heat a grill or grill pan over medium heat. Grill the bread for about 2-3 minutes on each side or until golden and crispy.

Assembly

Assemble the Bruschetta

Spread a generous layer of honey whipped ricotta on each slice of grilled bread. Top with a spoonful of fennel pistachio pesto and finish with a couple of balsamic roasted figs. Serve immediately and enjoy!
