Cucumber Chips

Dill Salmon Mousse

Method

Cucumber Chips

1

Prepare the Cucumbers

Wash and slice the cucumbers into thin rounds, about 1/4 inch thick. Place them on a clean kitchen towel or paper towel to absorb excess moisture.

2

Season the Cucumbers

Sprinkle the cucumber slices with salt and let them sit for about 10 minutes. This will help draw out moisture and enhance the flavor.

3

Drizzle with Olive Oil

After 10 minutes, pat the cucumber slices dry with another towel. Lightly brush both sides with olive oil.

Dill Salmon Mousse

4

Blend the Ingredients

In a mixing bowl, combine the cream cheese, smoked salmon, fresh dill, lemon juice, and black pepper. Use a hand mixer or a food processor to blend until smooth and creamy.

5

Chill the Mousse

Transfer the dill salmon mousse to a bowl, cover, and refrigerate for at least 30 minutes to allow the flavors to meld.

Topping

6

Prepare the Toppings

While the mousse is chilling, slice the additional smoked salmon into small pieces and set aside. Rinse the capers under cold water to remove excess salt.

7

Assemble the Cucumber Chips

Once the mousse is chilled, take a cucumber slice and add a dollop of dill salmon mousse on top. Add a small piece of smoked salmon, a few capers, and a sprig of fresh dill for garnish.
