Preparing the Pork Ribs

Prepare the Ribs

Preheat your smoker to 225°F (107°C). In a bowl, combine chile powder, brown sugar, paprika, salt, black pepper, garlic powder, and onion powder. Rub this mixture all over the pork ribs.

Smoke the Ribs

Place the ribs in the smoker and add wood chips. Smoke for 4-5 hours until tender, maintaining a consistent temperature.

Making the Chipotle Carolina Sauce

Combine Sauce Ingredients

In a saucepan, combine ketchup, apple cider vinegar, chipotle peppers, brown sugar, mustard, salt, and black pepper. Heat over medium heat, stirring until well combined. Simmer for 10 minutes.

Preparing the Pickled Cucumber

Make the Pickling Brine

In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, stirring until sugar and salt dissolve.

Pickle the Cucumber

Slice the cucumber thinly and pack into a jar. Pour the hot brine over the cucumbers along with garlic clove and dill. Let cool, then refrigerate for at least 2 hours before serving.
