Prepare the Trout

Season the trout fillets with salt and black pepper on both sides. Dredge each fillet in flour, shaking off the excess.

Cook the Trout

In a large skillet, heat olive oil over medium-high heat. Add the trout fillets and cook for about 3-4 minutes on each side, or until golden brown and cooked through.

Serve

Remove the trout from the skillet, serve hot with lemon wedges on the side.

Preheat Oven

Preheat your oven to 350°F (175°C).

Mix Ingredients

In a large bowl, combine sweet corn, diced green chiles, heavy cream, cornmeal, cheddar cheese, eggs, baking powder, and salt. Mix well until combined.

Bake

Pour the mixture into a greased baking dish and bake for 30-35 minutes, or until the top is golden and the center is set.

Prepare the Tartar Sauce

In a bowl, mix together mayonnaise, chopped dill pickles, capers, lemon juice, and fresh dill. Add salt to taste. Mix until well combined.
