Prepare the Corncakes
In a large bowl, combine the cornmeal, baking powder, and salt. In another bowl, whisk together the milk and eggs. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the corn kernels, cilantro, and melted butter.
Cook the Corncakes
Heat a non-stick skillet over medium heat and lightly grease it. Pour 1/4 cup of the corn mixture onto the skillet for each cake. Cook until bubbles form on the surface, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown. Keep warm in the oven while you prepare the chorizo.
Make the House Chorizo
In a mixing bowl, combine the ground pork, smoked paprika, cumin, garlic powder, oregano, red pepper flakes, salt, black pepper, and apple cider vinegar. Mix until well combined. Form the mixture into patties or crumble it into a skillet.
Cook the Chorizo
Heat a skillet over medium heat and add the chorizo mixture. Cook, breaking it apart with a spatula, until browned and cooked through, about 8-10 minutes.
Serve
Serve the corn cakes topped with the house chorizo and any additional garnishes of your choice.
