Preparation
Prepare the tomatoes
Dice the tomatoes into small pieces and place them in a mixing bowl.
Add garlic and basil
Mince the garlic cloves and add them to the bowl with the diced tomatoes. Chop the fresh basil leaves and add them as well.
Season the mixture
Drizzle 2 tablespoons of extra virgin olive oil over the tomato mixture. Add salt and black pepper to taste. Toss everything together gently and set aside to marinate for about 10 minutes.
Grilling the Bread
Slice the baguette
Slice the baguette into 1-inch thick slices.
Grill the bread
Preheat a grill or grill pan over medium heat. Brush both sides of each slice of bread with the remaining 1 tablespoon of extra virgin olive oil. Grill the bread slices for about 2-3 minutes on each side, or until they are golden and crispy.
Assembling the Bruschetta
Top the bread
Once the bread is grilled, remove it from the heat and let it cool slightly. Spoon the tomato mixture generously onto each slice of grilled bread.
Serve
Arrange the bruschetta on a serving platter and serve immediately, garnished with additional basil leaves if desired.
