Preparation
Peel the Plantains
Cut off the ends of each green plantain and make vertical slits along the skin. Carefully peel the skin off to reveal the plantain.
Slice the Plantains
Cut the peeled plantains into 1-inch thick slices. You should have about 8-10 slices from the two plantains.
Cooking
Heat the Oil
In a large frying pan, heat the vegetable oil over medium heat until it reaches about 350°F (175°C).
Fry the Plantains (First Fry)
Carefully place the plantain slices in the hot oil and fry for about 3-4 minutes until they are lightly golden. Remove them from the oil and let them drain on a paper towel.
Flatten the Plantains
Using the bottom of a flat surface, such as a plate or a flat spatula, gently press down on each fried plantain slice until they are flattened to about ½ inch thick.
Fry the Plantains (Second Fry)
Return the flattened plantains to the hot oil and fry for an additional 2-3 minutes until they are crispy and golden brown. Remove and drain on paper towels.
Season the Tostones
While the tostones are still hot, sprinkle salt over them and, if desired, garlic powder for extra flavor.
Serving
Serve the Tostones
Arrange the tostones on a serving platter. Optionally, garnish with chopped cilantro and serve with lime wedges on the side for squeezing over.
