Method
Cake Preparation
Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
Mix Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
Beat Eggs and Sugar
In a large mixing bowl, beat the eggs and granulated sugar together using an electric mixer on high speed until the mixture is pale and fluffy, about 5-7 minutes.
Add Vanilla and Milk
Add in the vanilla extract and milk, mixing until just combined.
Combine Mixtures
Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until no flour pockets remain.
Bake the Cake
Pour the batter into the prepared baking pan and smooth the top. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
Cool the Cake
Once baked, remove the cake from the oven and let it cool completely in the pan on a wire rack.
Tres Leches Mixture Preparation
Soak the Cake
Once the cake has cooled, poke holes all over the top using a fork. Slowly pour the tres leches mixture over the cake, allowing it to soak in. Let it rest for at least 30 minutes.
Whipped Cream Topping Preparation
Whip Cream
In a large mixing bowl, beat the heavy whipping cream with an electric mixer on high speed until soft peaks form.
Add Sugar and Vanilla
Gradually add the powdered sugar and vanilla extract while continuing to beat until stiff peaks form.
Top the Cake
Spread or pipe the whipped cream over the soaked cake evenly.
