Cocktail Preparation

Make the Clove Simple Syrup

In a small saucepan, combine equal parts sugar and water with a few cloves. Heat until sugar dissolves, then let steep for 30 minutes. Strain and cool.

Prepare the Cocktail

In a cocktail shaker, combine the fresh pineapple juice, clove simple syrup, lime juice, lemon juice, and egg white.

Dry Shake

Shake the cocktail shaker vigorously without ice for about 15 seconds to emulsify the egg white.

Add ice cubes to the shaker and shake vigorously again for another 15 seconds.
