Cook the Vegetables

In a large skillet, heat olive oil over medium heat. Add chopped onion, minced garlic, diced carrot, and diced celery. Sauté for about 5-7 minutes, or until vegetables are softened.

Brown the Turkey

Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon, about 5-7 minutes.

Add Tomatoes and Seasoning

Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and black pepper. Reduce heat to low, cover, and let simmer for about 20 minutes, stirring occasionally.

Mix the Ricotta

In a bowl, combine sheep ricotta, goat ricotta, egg, chopped parsley, and salt. Mix until well combined and set aside.

Lasagna Assembly

Preheat Oven

Preheat your oven to 375°F (190°C).

Layer the Ingredients

In a baking dish, spread a thin layer of bolognese sauce at the bottom. Place 3 sheets of brown rice lasagna noodles on top. Spread a layer of the ricotta mixture, followed by another layer of bolognese sauce. Add 3 more sheets of noodles, then repeat the ricotta and bolognese layers. Finish with the remaining noodles, bolognese sauce, and top with sliced buffalo mozzarella and grated Parmesan cheese.

Bake the Lasagna

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Let it Rest

Remove the lasagna from the oven and let it rest for about 10 minutes before slicing and serving.
