Method
Preparing the Filet Mignon
Season the Filet
Pat the grass-fed filet mignon dry with paper towels. Season both sides generously with salt and black pepper.
Sear the Filet
Place the filet mignon in the pan and sear for about 3-4 minutes on each side for medium-rare. Adjust cooking time for desired doneness.
Add Butter and Aromatics
In the last minute of cooking, add butter, crushed garlic cloves, and fresh rosemary to the pan. Spoon the melted butter over the steak as it finishes cooking.
Rest the Steak
Remove the filet from the pan and let it rest on a cutting board for about 5 minutes before slicing.
Cooking the Seasonal Vegetables
Prepare the Vegetables
Wash and trim the asparagus. Peel and slice the carrots. Cut the zucchini into half-moons.
Cook Until Tender
Sauté the vegetables for about 5-7 minutes, stirring occasionally, until they are tender but still crisp.
