Method
Tortilla Chips
Prepare the Tortilla Chips
Cut each corn tortilla into triangles. Heat vegetable oil in a deep pan over medium heat. Once hot, fry tortilla triangles until golden brown and crispy, about 2-3 minutes per batch. Remove and drain on paper towels. Season with salt to taste.
Queso
Make the Queso
In a saucepan over medium heat, combine Velveeta cheese, cream cheese, diced green chiles, and milk. Stir continuously until melted and smooth, about 5-7 minutes. Keep warm for serving.
Guacamole
Prepare the Guacamole
In a bowl, mash the ripe avocados. Stir in lime juice, diced tomatoes, chopped cilantro, and salt. Mix until well combined and creamy. Adjust seasoning to taste.
Lettuce
Prepare the Lettuce
Wash and shred the lettuce. Place it in a serving bowl.
Mixed Cheese
Prepare the Mixed Cheese
In a bowl, combine shredded cheddar cheese and shredded Monterey Jack cheese. Set aside for serving.
Pico de Gallo
Make the Pico de Gallo
In a mixing bowl, combine diced tomatoes, diced red onion, chopped cilantro, lime juice, and salt. Stir well to combine and let sit for 10 minutes to meld flavors.
Roasted Corn & Poblanos
Roast the Corn & Poblanos
Preheat the oven to 400°F (200°C). Toss corn kernels and chopped poblano peppers with olive oil and salt. Spread on a baking sheet and roast for 20-25 minutes until lightly charred. Remove and let cool.
Tomatillo Crema
Prepare the Tomatillo Crema
Blend tomatillos, sour cream, lime juice, and salt in a blender until smooth. Adjust seasoning to taste and set aside.
Roasted Red Salsa
Make the Roasted Red Salsa
In a bowl, mix canned fire-roasted tomatoes, diced red onion, fresh cilantro, lime juice, and salt. Stir to combine and let sit for flavors to meld.
Adobo Crema
Prepare the Adobo Crema
In a small bowl, mix sour cream and adobo sauce until well combined. Adjust to taste.
