Gather and chop all ingredients: ham, bell peppers, and scallions.

Whisk the Eggs

In a bowl, whisk together the eggs, salt, and black pepper until well combined.

Cook the Omelette

Melt butter in a non-stick skillet over medium heat. Add the ham, bell peppers, and scallions, and sauté for about 2-3 minutes until softened. Pour the egg mixture over the vegetables and cook until the edges start to set, then gently lift the edges to let uncooked egg flow underneath. Cook until fully set, then fold and serve.

Prepare the Potatoes

In a bowl, mix diced potatoes with olive oil, paprika, garlic powder, salt, and black pepper.

Spread the potato mixture on a baking sheet and bake in a preheated oven at 400°F (200°C) for about 25-30 minutes or until golden brown and crispy, tossing halfway through.
