Prepare the Vegetables

Wash the mixed greens thoroughly under cold water and pat dry with a clean towel. If using whole leaves, tear them into bite-sized pieces and place them in a large salad bowl.

Add Cherry Tomatoes

Cut the cherry tomatoes in half and add them to the bowl with the greens.

Slice the Cucumber

Peel the cucumber if desired, then slice it thinly. Add the cucumber slices to the salad bowl.

Grate the Carrot

Use a grater to shred the carrot. Add the grated carrot to the salad bowl.

Thinly slice the red onion and add it to the salad bowl.

Combine Dressing Ingredients

In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper until well combined.

Pour the dressing over the salad just before serving and toss gently to combine all the ingredients.
